Sweet Lime and Garlicky Salmon

I won’t leave you with a grumbling tummy while I ramble on about how succulent and satisfying this dish is. I think the pictures speak for themselves.

Time: 40 minutes (5 minutes prep; 30-35 cook time)

Servings: 4

Ingredients:

  • 3lbs of salmon

  • 8 cloves of garlic pressed or finely chopped

  • 1 cup of honey

  • 1/4 cup of soy sauce

  • Zest and juice from 2 limes

Melty Sauce:

  • 4 Tablespoons soften butter

  • 2 tsp honey

  • 1 tsp lime zest

  • dash of salt

Garnish:

  • lime cut into wedges

Preheat oven to 400 degrees

Whisk together lime juice, honey, garlic, soy sauce, and zest in a large, oven-safe casserole.

Place Salmon flesh side down, into sauce while rubbing and coating surface with sauce.

Cover and refrigerate for half and hour; flip salmon halfway through leaving skin side down.

Place dish uncovered and cook for 30 minutes or until flesh is opaque and flakes easily with a fork (internal temperature 145 degrees)

While your salmon cooks, mix together the soften butter, Teaspoon of lime zest, salt, and Tablespoon of honey into a spoonable consistency. When Salmon is done, dollop a pat of the butter on top your salmon. Garnish with a lime wedge.

We’re in a rut with our sides as we always opt for potatoes either roasted or mashed and asparagus, but green beans or broccoli would probably be a good accompaniment as well.
